THROWN TOGETHER: Cabbage Patch Pasta with Spicy Italian Chicken Sausage.
Add a small amount of olive oil to a sauteé pan and cook sausage over medium heat until almost done. In the same pan, sauteé onions until they begin to turn translucent. Add mushrooms, cover, and simmer until they exude their juices. Add garlic and toss pan to mix. Add cabbage and tomato, sprinkle with black pepper and crushed red pepper, toss again, and simmer (covered) until cabbage is tender but not soggy. Toss with 1-cup cooked fusilli pasta and grate parmesan cheese over the top. Served here with a salad of shaved raw beets and blue cheese crumbles on green leaf lettuce with balsamic vinaigrette. Also tastes excellent cold the next day.

SLUMMIN’ IT: A Northwest spin on the traditional Vietnamese peasant dish, which is usually made with a small trout, bone-in. Here: baked lemongrass-, ginger- and garlic-encrusted salmon with jasmine rice and asparagus. In the traditional method, the rough texture of the lemongrass is intended to mask the crunching of the small bones of the fish.
